Wraps are such a delicious and satisfying lunch and they are so versatile! You can add pretty much anything you are craving at the moment, which is why the eggplant hummus made an appearance in my lunch wrap. My sister and I made these with arugula and red onion for a bite, and avocado, hummus, and turkey for that savory deliciousness. Some other ideas could be a Mediterranean wrap (with hummus, chicken, feta, kalamata olives, cucumber, and tomato), or a veggie wrap (with chive cream cheese, avocado, cherry tomatoes, sprouts, and shredded carrots).
