Mediterranean Collard Greens Wraps with Basil White Bean Hummus

Wraps are one of my favorite lunches because you can modify them to satisfy exactly what you’re craving at the time. I posted this recipe for a more traditional wrap on a sprouted grain tortilla, but I also love using collard greens as the wrap. In this particular one, I used peppered turkey, shredded carrots, sliced cucumber, greek olives, pickled onions, and basil white bean hummus. Simply wash a large collard green leaf, place whatever variation of ingredients you’d like inside, roll, and enjoy!
