Lemon Poppy Seed Muffins with Coconut Sugar Lemon Curd


These muffins are absolutely everything. The combination of lemon and poppy seeds has always been one of my favorite flavors in everything from muffins to waffles to scones… anything. These are especially amazing because they’re made with very little (coconut) sugar, unrefined oat flour, and lots of lemon zest. The coconut sugar lemon curd is also amazingly simple and can be used on numerous other things as well (toast, biscuits, even yogurt). Enjoy these for breakfast, and afternoon snack, dessert, or pretty much anytime of the day.


  • 1 cup applesauce

  • 1/4 cup plus 2 tbs coconut sugar 

  • 4 eggs

  • 2 tsp baking powder 

  • 2 tsp pure vanilla extract 

  • 1/4 cup fresh lemon juice

  • 2 small lemons, zested 

  • 2 cups oat flour

  • 1/4 cup poppy seeds

for the coconut sugar lemon curd:

  • 2/3 cup fresh lemon juice 
  • 2 tablespoons lemon zest
  • 1/2 cup coconut sugar
  • 2 eggs, room temperature


  1. Preheat oven to 350 degrees F.
  2. Prepare a muffin top pan with coconut oil. 
  3. In a medium bowl whisk together applesauce, coconut sugar, and eggs until just combined.
  4. Add baking powder, vanilla extract, lemon juice and zest. Combine.
  5. Slowly add baking flour while continuing to mix. Continue to beat mixture until fully combined. Be careful to not over mix.
  6. Fold in poppy seeds.
  7. Spoon about 2 tablespoons of batter into muffin top pans and top with a heaping teaspoon of fresh lemon curd (recipe below).
  8. Bake for 15-20 minutes or until toothpick comes out clean. Enjoy! 

for the coconut sugar lemon curd:

  1. In a small sauce pan, over medium heat, dissolve sugar into lemon juice. Add the zest.
  2. Lightly beat the eggs in a small bowl. Whisking constantly, slowly pour lemon/sugar syrup into the egg. Beat for 2 minutes then transfer back into the saucepan.
  3. With heat on low, stir the mixture until it just starts to bubble at the edges.
