Hummus, Quinoa, Baked tofu (recipe coming soon!), Arugula Pesto, Roasted Sweet Potato, Avocado, Carrots, Celery,

This lunch spread is what dreams are made of… the baked tofu is packed with protein for energy, the veggies are filed with nutrients for nourishment, and the hummus and pesto are pure deliciousness. I like to roast sweet potatoes and other veggies and prepare hummus on the weekend to have with lunches like this. Feel free to try this with roasted chicken or an egg as an alternative protein!
