I’ll be the first to say that I think the health benefits are definitely overstated. One week I’ll see a headline claiming “turmeric can cure all your sleep problems” and then when I go to the grocery store, many items are “turmeric infused” in some way or another. Now I don’t know too much about curing sleep problems, but it does seem slightly curious that an herb could cure that many problems. That being said, I do love it and believe in some of its amazing health benefits (pain relief, heart health, detoxification). Roasting veggies with turmeric is one of my favorite ways to reap these benefits. Enjoy these carrots in salads, wraps (such as my collard greens wrap), or fresh out of the oven on their own!
Recipe for Turmeric Roasted Carrots
Good quality, organic carrots (preferably local) are so so important for this recipe! They’re sweeter and have better flavor. Wash & cut the carrots and toss in olive oil. Season well with salt, pepper, and turmeric and roast for about 25 minutes in the oven at 375ºF. They’re that simple!
