Broccolini & Chickpeas with Avocado Dip

Having this avocado dip on hand is such a game-changer! It can be used as salad dressing, dip for roasted vegetables, or sauce for a bowl! It’s so incredibly flavorful and made with super simple ingredients; I can’t recommend it highly enough. I steamed the broccolini for about 10 minutes and then tossed it in a little bit of lemon juice, that’s it! I added some sprouted chickpeas from the Sunday morning farmers market and had a delicious lunch. Consider making a double batch of this sauce because you’ll want to add it to everything! Enjoy!

Recipe for Creamy Avocado Dip

Ingredients

  • 1 ripe avocado
  • 1 tbs greek yogurt
  • 1 tbs red wine vinegar
  • 2 tbs lemon juice
  • 1/3 cup filtered water
  • 1 heaping tbs dijon
  • 3 gloves garlic, peeled
  • 1/2 tsp salt
  • sprinkle of red pepper flakes

Method

  1. Combine all ingredients in a high powered blender and blend on high for 2-3 minutes or until thick and creamy.
  2. Enjoy with fresh veggies or on a salad or bowl!
