There are some combinations I will never tire of and a classic pb & j is one of them. There’s something about a good salty peanut butter that is made (even!) better when enjoyed with a spoonful of strawberry jam. For these overnight oats, I prefer using my homemade chia seed jam because it is not cloying. This is the power breakfast of all power breakfasts and I’ll be enjoying it on repeat all summer long. Enjoy!
Recipe for PB&J Overnight Oats
- 1/3 cup oat bran
- 1 cup almond milk
- 2 tbs ground flaxseed
- 2 tbs peanut butter or peanut powder
- dash of sea salt
- 1 tsp vanilla extract
- 2-3 tbs chia seed jam
- bee pollen, coconut flakes, banana
- Combine the first 6 ingredients in a glass mason jar and shake vigorously to combine. Refrigerate overnight.
- In the morning, top the oats with toppings of your choice and enjoy right out of the jar or in your favorite bowl!
