Chickpea Lunch Bowl

I absolutely love chickpeas and if they don’t come in the form of my hummus, I like using them as a salad topping! Packed with fiber to keep you full and plenty of other vitamins, they’re a great way to enhance any salad or bowl. For an easy salad, simply choose a green (or mix of greens like kale + crisp romaine) and top with desired veggies. My base green was arugula and had chopped cucumber, sliced cherry tomatoes, green onions radish, avocado, and a little bit of salmon! Garnish with salt and pepper and top with dressing of your choice. Here are a few other combinations:

  • spinach + red onion, cucumber, chickpeas + dark balsamic & olive oil
  • mixed greens + shredded carrot, snap peas, chickpeas + lemon miso vinaigrette
  • arugula + red bell pepper, persian cucumber, chickpeas + red wine vinegar & olive oil
